Recipes for your blanket banquet

We’ve left no rug unturned in our hunt for recipes that will turn every picnic into a blanket banquet. With just a bit of preparation (and, yes, a little Country Life) there needn’t be a Cocktail Sausage or supermarket Scotch Egg in sight.

Chocolate fridge cake

  • You will need:
  • 150g Country Life butter
  • 150g Plain chocolate
  • Half a packet of ginger biscuits (small pack)
  • Half a packet of Digestive biscuits (small pack)
  • 3 Tablespoons of golden syrup
  • A handful of raisins and chopped mixed nuts (optional)

Made in minutes, but will disappear in seconds. Very relaxing to make as there is no cooking involved, only chilling! Which is after all, what a picnic should be all about.

Line a smallish square shallow tin with cling film so that it hangs over the sides. Then crush the biscuits in a bowl (this is a great way to relieve stress!) and add your raisins and nuts.

Now melt the chocolate, butter and syrup over a bowl of boiling water. Once melted together, combine the biscuit mix and pour all into the tin and cover with the overhanging cling film while pressing down to firm it.

Chill in the fridge for 3 hours or until solid, ready for your picnic.

By the way, it's worth sticking a padlock on the fridge once these little lovelies are in the house!
